Chuka Hotate is also known as Seasoned Scallop Wings. Hotate scallops have beautifully soft and sweet meat and an incredibly delicate texture. The best hotate comes from cold waters, which is why our hotate is caught in Hokkaido. In Japan, it is very common to eat hotate raw in the form of sushi or sashimi.
